Chicken


Ingredients:
-          ¼ cup AP flour
-          1tsp salt
-          1tsp paprika
-          ¼ tsp pepper
-          1 tsp garlic powder
-          2 Tbsp Olive oil
-          1 medium green pepper cut into strips
-          1 medium red pepper cut into strips
-          1 medium onion chopped
-          1 can (14-1/2 ounces) diced tomatoes with juice
-          1 cup chicken stock
-          1 Tbsp Oregano
-          1 can tomato paste
-          1 jar of mushrooms sliced and drained.
-          6 chicken breasts
-          Salt and Pepper to your taste =D

Combine the first 5 ingredients in a large bowl and one by one coat the chicken in it and pass it to a cookie sheet covered in aluminum foil.
Bake the chicken for around 40 min at 350F or until internal chicken temperature reaches 180F
Meanwhile in a pan heat the 2tbsp of Olive oil and once is hot, cook the onion and peppers for about 5 min.
Add 1Tbsp of flour to the pan where the onion and peppers are cooking and dissolve it with a whisk, then add the chicken stock, mushrooms, oregano and the diced tomatoes. Stir till dissolved and add the tomato paste.
Add the chicken previously baked and let cook for  5min at low heat until bubbly.
P.S: Add hot sauce if you want and season with Salt and Pepper  if needed.

Eat it with orzo, white rice and accompanied by a green salad, green beans or maybe steamed Zucchini!
